  • Andrew went with me to Nicaragua this year, and got to spend time with the producers on their farms and in the cupping room. He recently remarked that now it’s easy to taste each of their personalities in the cup because they are reflective in the style of the coffee. This one, for sure. Juan Ramon’s nickname is Formal, and this coffee is nothing if not straightforward. It’s a very clean, washed coffee from the Marsellesa variety, a member of the Sarchimor class (which shouldn’t taste good, in my opinion, but it does). La Dueña is a pristine farm that is owned by Juan’s mother, Doña Jenny, and was planted largely by Juan and his father. We share this coffee exclusively with Savoy Restaurant, so during Juan’s Tulsa visit we went there for breakfast. Juan’s recommended food pairing? Biscuits & gravy.
