  • Once upon a time, there was a goatherd named Kaldi whose flock stumbled upon a coffee tree in the Ethiopian highlands. Those goats ate the forbidden fruit and Kaldi followed suit. This is the legend of the discovery of coffee. It’s from Ethiopia that all coffee originates. In a sense, Ethiopia is our Eden and Kaldi our Adam. This year I took my first trip to the origin of all origins, and learned things I never expected to know. I gained the knowledge by eating the fruit. From a goatherd in the forest, coffee has come a long way. This is a melange of three different heirloom varieties from the Worka Sakaro washing station in Yirgacheffe, harvested by some 400 farmers, then fermented anaerobically for up to one week before carefully drying another 18 days. The result is one of the best coffees of the year. (I painted that artwork)
