- Dembi is a small area within the Sidama region of Ethiopia. When I initially cupped this harvest’s Ethiopian coffee samples, I was fairly unimpressed, but I had another sample from this sub-region sent over and it cupped out much better. It’s a natural, which means the cup is very fruit-forward. It can be more acidic or a softer coffee based on the water temp and grind size you brew with, so dial it in. We get this coffee through Unravel Merchants, which imports coffee from the exporter, Ardent, through the importer, Algrano. Ardent gets coffee cherries through smallholder producers in the area, and I’m unsure what happens after that. This is the problem with purchasing coffee through too many channels and not knowing the source intimately, like I do in other regions. But I’m about to solve that problem.
