  • The first coffee I bought from Felipe Arcila at Cofinet was a Maracay Honey. At the time, I didn’t realize Luz Helena was Felipe’s mother. But over the course of the past few years, I’ve gotten to know her and the family a little better, and grown quite fond of Luz Helena and her coffees. Honey processing is a tricky gamble. It involves stripping the skin off the coffee fruit and drying the seeds with the mucilage intact. Exposing all that sticky, sweet “miel” (as it’s known in Spanish) to the environment can result in either complex, delicious coffee; or if the weather and handling of the seeds isn’t just so, overfermentation can ruin the lot. So in some ways, this coffee is an anomale in today’s unpredictable weather. Enjoy it while it’s still available, appreciate it for what it is, and send thanks to Luz Helena on IG @cofi_net.
