- This is it. This is my favorite coffee of 2025. You might not be surprised that it’s from Panama, as so many of our holiday coffees have been throughout the years. Priscilla and her son, Ivan, at Bambito Estate have proven to be some of the most talented coffee producers in a region where many of the world’s best reside. We are proud to call them friends, and I’m fortunate to have the opportunity to roast this coffee. It’s a Yellow Catuai, fermented anaerobically for 3 days with Saccharomyces cerevisiae, which is a wine yeast Priscilla and Ivan used in order to control the rate of fermentation. The coffee was then dried on raised African-style beds for 18 days, preserving the sweetness and complexity drawn out through fermentation. This meticulous processing created a coffee that you have to taste to believe.
This is our ultimate holiday coffee for 2025. We're selling it in a special edition bag with a note from Priscilla and information about the coffee straight from Ivan. What a year. -
