  • La Dueña is a farm that is actually owned by Juan Ramón’s mother, Doña Jenny. Thus the name. After Juan finished his agronomy degree, and his father passed away suddenly, he was thrust into the general management of all three of the family farms. This year, all of the family’s best coffees came from La Dueña. This one is a washed coffee of the Marsellesa variety. Juan Ramón likes this variety because it has good productivity but still has a good cup quality, which tends to have floral aromatics. La Dueña was planted with coffee in 2011, but 25% of the land is still native forest, left in order to maintain biodiversity and the farm’s distinct microclimate. This is a coffee that I selected as an exclusive, only available at Savoy Restaurant and DoubleShot. Pairs well with the illustrious Savoy cinnamon roll.
