- The San Isidro variety is a hybrid of something called Villa Sarchi (a dwarf Bourbon, similar to Caturra) and the disease-resistant Timor hybrid. This coffee shouldn’t taste good, but it does. Blame it on the miracle of modern science or the ingenuity of coffee producers learning how to work with new varieties using innovative processing techniques, or both. La Minita bought this farm, located a few kilometers away in a different river system, and planted distinct coffees from those at the flagship farm. This one was dried for 21 days on raised beds, bringing out a relatively complex range of unusual fruits sitting on a base of cedar aromatics. If you’re looking for something with a bit more brightness in the top notes, this is the one for you.
