You’ve never had a coffee like this. For one thing, this coffee was harvested at the inception of 2019, just before we opened The Rookery. I bought this coffee when the commodity market was a third of what it is today, but I paid over ten times the market price. It’s been in my possession ever since, awaiting the day I’d finally decide to roast and drink it. Lucky for you, that’s right now. It’s from Chiriqui, Panama; from a farm we used to do a lot of business with. The variety is called Chicho Gallo, named after the pioneering patriarch of the family, but commandeered from the Amaro Gayo seed stock of Ethiopia. This is a one-off. No more of this coffee exists, anywhere. 2019 was a good year. It’s time to celebrate.
