Panama Hartmann Ochenta

  • Way back in the early days of our relationship with the Hartmann family, they were known for their honey coffees. That has changed over the years, and they produce more naturals now than honey coffees. But the very first coffee I bought from Finca Hartmann was a washed coffee. So, in a sense, this is a throwback to that first one so many years ago. The Hartmann family are some of the premier coffee producers in the world. They employ innovative, new practices, as well as perfecting traditional methods for processing micro-lots. As third-generation coffee farmers, the Hartmanns practice ecological sustainability, preserving old-growth rainforest for a huge diversity of birds and insects. This coffee is a special prep micro-lot, washed and dried by the sun and finished in a mechanical drier for uniformity and precision. The Caturra variety is a dwarf mutation of the Bourbon family, and it is one of my favorites for its versatility, acquiring traits in the cup inspired by the soil and microclimate in which it is cultivated.
