Guatemala Ayarza Natural

  • Ayarza is named for a 750-foot deep crater lake formed during a massive eruption some 20,000 years ago that left a gaping hole where two mountains used to be. Before the arrival of the Spanish in the early 1500s, this region of Guatemala was inhabited by the Xinca people, a distinct group that pre-dated the Mayans and may have been some of the earliest inhabitants of Mesoamerica. A blend of three varieties from nine producer families on twenty-eight farms, this natural billows with tropical fruit aromatics. After harvest, the coffee was dried for six days on patios and then finished in mechanical driers for a controlled fermentation and smooth cup profile. A coffee that reflects the people and the land: blended, natural, and deep.
