Ethiopia Sidamo Shakisso

  • I made a pourover of this coffee this morning and it was so good. The floral aromatics and the sweetness of the cup were the most prominent qualities. The Sidamo region of Ethiopia is well-known for producing excellent coffees, but finding the right one is difficult. I feel like all of the washed Ethiopians we get are really good, but it's one out of 5 that are stellar. And in my opinion, this is stellar. The coffee appears to be a mixture of a few of the hundreds of naturally-occurring varieties which are indigenous to this birthplace of coffee. It's grown by small farmers, wet processed and sundried on raised beds. Excellent cup. Our pastry chefs made a cantaloupe jam for our house-made english muffins that pairs very nicely with the coffee.
