- When I first met Victor Calderon, I was impressed with the creativity and laissez-faire attitude with which he runs his farm. At El Tambor, he told me how he figured out a natural way to control roya using clay as a fungicide. He explained to me that his workers were free to take anything they wanted, and that’s how he prevented theft. And we shared a basket of fruit as we discussed his doubt and distrust of the coffee tasters at the Cup of Excellence competition, in which he’d submitted his coffee. A resourceful man with double-edged trust issues. The coffee is a prime example of a standard Guatemalan washed coffee. It’s everything you want with your pancakes and nothing weird to distract you from coffee break banter at work.
