  • Smooth. That’s about all I can think of when I drink this coffee. It goes down easy. The Typica variety is the original coffee plant commandeered by the Dutch from Yemen and taken to the Island of Java, gifted to the French, sailed across the Atlantic to Martinique, and distributed throughout the Americas. There’s a lot of history behind this coffee. It was grown on the flanks of Volcan Baru at Bambito Estate, where our friends Priscilla and her son, Ivan, manage the day-to-day operations. The farm was founded by Priscilla’s grandfather, who only finished elementary school but taught himself English and became the governor of the Chiriquí province, twice. He passed down the wisdom that, “The best fertilizer for the soil is the sole of your boots.”
