- The Peralta family started growing coffee in Nicaragua in the early 20th century, renovated a war-torn area in Nueva Segovia after the Sandinista uprising, and began producing specialty coffees in 2008. This farm is owned by Octavio Peralta and is at a very high elevation, which causes the coffee to ripen very slowly and harvest late in the season. Octavio and his brother Julio own the beneficio where this coffee was processed and the export company which ships all of our Nicaraguan coffees to the US. This lot is a red Catuai which was dry processed, creating a melange of fruit and spice and darker flavors in the cup. I find the profile to be tightly wound, opening up as it cools. Enjoy as a morning wake-up or a satisfying dessert coffee.
