Red Water Oolong is from a tea garden in Taiwan. This is a blend of three Chinese varieties of tea. Oolong is a style that represents only 2% of the world’s tea production, characterized by a medium level of oxidation: more than green but less than black. This farm uses Japanese-style Natural Farming methods and artisanal processing guided by experienced tea masters. During processing, the tea is rolled into balls, which expand and unwrap during brewing. The liquor is honey-colored with aromas of cinnamon, pear, honeysuckle, and leather.
Margaret's Hope Darjeeling is grown in the Himalayan area of northeast India. Darjeeling teas are renowned for their exquisite taste, and revered as the “Champagne of teas.” Margaret’s Hope is a farm named for the daughter of the plantation owner in the 1920s, who fell in love with the tea garden, but died on her voyage back to England. The soil and climate of this region produces a very distinctive tea, which is harvested only during one season of the year. This is a “Second Flush” tea, meaning it is the second picking of the season, giving influence to a round and fruity cup profile. It produces an amber liquor with aromas of muscat grapes, dandelion, and lemon zest.
Assam is a state in northeastern India known for its wildlife, archeological sites and tea plantations. Along the great Brahmaputra River, tea plants thrive in the hot, rainy climate and produce some of the most well-known black teas. The Assam tea district encompasses an area that spans the equivalent distance from New York City to Chicago, the largest tea producing region in the world. Itakhooli Estate retains one of the old clonal varieties called Keyhung 1, which produces a cup with the character of British teas during the colonial period. This tea yields a reddish-hued liquor with malty overtones and aromatics of hay, black pepper, and raspberry jam.
