Panama Hartmann Honey

  • Hartmann Honey. It’s a catchy name, and several years ago when I first started visiting Finca Hartmann, it was their signature coffee. As trends changed and naturals became more popular in the specialty coffee world, the Hartmanns evolved with it and used their limited resources primarily on washed and natural coffees. Last year in the Chiriquí Province of western Panama the weather conditions made it difficult to produce naturals, and because of this irregular weather, Hartmann Honey returns. This coffee was picked ripe and the skins were removed before the coffee was dried with its mucilage, or miel (honey in Spanish), intact. This process creates a sweeter cup with cereal-like aromatics.
