• Maduro was born in Colombia at Hacienda El Boton when my friend Ariel Montoya agreed to do some experiments and process the coffee like they do in Ethiopia and Yemen. The results were amazing, and after coffee historian Mark Pendergrast tasted it, he wrote a story about this El Boton Natural in Wine Spectator magazine. As we continued to make improvements in the harvesting and post-harvest processing year after year, our greatest results came when the coffee was only selected once it reached peak ripeness and took on the color of bull’s blood. And the name was born, Maduro. This was the first dry-processed coffee to be exported from Colombia, and it is still the greatest.
