Ethiopia Yirgacheffe - Bedhatu Jibicho

  • This is a natural Yirgacheffe coffee I purchased from my friend Peter at Royal Coffee, one of the largest importers of specialty coffee in the US. Bedhatu Jibicho is a woman who owns a fairly large farm, and has been managing it for over 50 years, without the use of any chemical inputs. She employs 20 year-round workers and 130 seasonal workers, most of whom are female. The coffee is sorted by density and hand-sorted to remove defects or unripe coffee cherries. It is then spread on raised beds to dry for 20 days in the Ethiopian sun.
