Colombia El Congo

  • The El Congo farm is located deep in the heart of the Huila province of Colombia, right next to Dos Quebradas. The owner, Diego Calderon Ramirez is best friends with the owner of “Dos Q,” as it became known around here. During my visit, we walked around both farms and then sat down together on the patio of Diego’s house where I made everyone coffee and then Diego and his wife served up beers and a feast of the local fare. This coffee was fermented for 12 hours before soaking in spring water for another 40 hours and then dried on raised beds. It’s Colombian coffee taken to the next level. (Juan Valdez, eat your heart out.) The only thing better would be to sit back on that patio and chow down with Diego and Daimes again.
